Open the application, then press the "End call" key - it will ask if you want to exit the application or minimise it - select minimise. It runs in the background. Then when you want to check your progress press the "Activity menu" or "Shortcuts" button (I got rid of my W595 phone ages ago and so can't remember what it's called exactly) and it will show under "Running Applications" - open it and you will see how many steps you have done. To continue counting, minimise it again as instructed before.
